Makati Diamond Residences took part in the Philippine Culinary Cup 2017 held at the SMX Convention Center last August 2 to 5, 2017 and proudly honored the property with nine accolades, taking home a total of 21 medals.
Leading her team to victory, Executive Chef Merlinda Junio, together with Senior Sous Chef Danilo Silverio, Sous Chef Michelle Ann Toledo, Chef de Partie Allan Mislos, Waiter Paul Michael Austria, Banquet Captain Jayson Espinola, Kitchen Manager Chef Imelda Tecson and Chief Steward Melchor Cabatic brought home the championship title during the Unilever Food Solutions’ Great Banquet Challenge. A number of the award winning dishes including cream of mushroom soup, with truffle foam, bird’s nest, braised beef potato and Napoli tomato mash, roasted turkey stuffing foie gras and chestnut, baked salmon Mediterranean crust with lime foam and tomato basil sauce, rock sugar honey braised pork belly, lime and basil mousse on ginger tartlet, Christmas fruit cake with champagne custard sauce and sparkling white Christmas cake will be featured as part of the property’s Christmas brunch and New Year’s dinner promotion.
Executive Chef Merlinda Junio and Sous Chef Jemelle Arlo Baarde were awarded a gold medal for their Business Class Dish under the Philippine Airline Inflight Meals Competition. Their winning dishes, herbed grilled chicken with bulgur and green salad, U.S. beef cheeks, Tagaytay vegetable poached in butter, orzo and kesong puti, and warm Baguio strawberry rhubarb crumble pie highlights a well-balanced mix of savory and sweet notes that will surely comfort you during your short or long haul flight.
Not to be outdone, the Dream Team Challenge, made up of Senior Sous Chef Danilo Silverio, Sous Chef Jemelle Arlo Baarde, Sous Chef Michelle Ann Toledo, and Chef de Partie Jessienor Paet, put together a well-rounded three course meal. Dishes prepared include marinated flounder in grape sauce, avocado tartare on watermelon jelly followed by an entrée of Iberico pork belly with polenta and roasted eggplant, cauliflower foie gras in filo bordelaise sauce, and culminating the meal with a helping of Earl Grey and Jivara mousse cake.
A fourth team challenge entry prevailed in their display of teamwork and excellence, being recognized with a bronze award under the Young Chefs Team Challenge. Chef Jan Paul Apas and Chef Marc Allan Kevin Crusem served a winning entry of Asian seafood cake with kimchi, mango puree and Kewpie dressing and a helping of basted chicken breast with celeriac potato puree and Pernod butter sauce peach chutney.
Gold medalist, Chef Abundio Dadulla, made us equally proud with his winning Quick Fire Salad entry, pomelo and green mango salad with grilled shrimp in orange brine Camembert.
Demonstrating their expertise and progress in their craft, three skillful chefs took home a silver medal for their individual challenges. Recognition in the Creative Breakfast Challenge was gained by Senior Sous Chef Danilo Silverio, as he served up his platter of baked salmon with saffron lime cream, baked porcini, shiitake mushroom and egg in bread rolls, soy garlic marinated Angus beef with garlic rice. Sous Chef Jemelle Arlo Baarde was given distinction in the Local Fish or Seafood category with his entry of pan roasted parrotfish, cauliflower puree, Persillade, black shrimp crispy orange beurre blanc. Chef de Partie Jessienor Paet was awarded for his peppered pork loin, umami rice and pumpkin puree, with whole grain mustard sauce under the U.S. Pork Category.
A second award was accepted under the U.S. Pork Category with Chef Donald Pesigan taking home a bronze medal for his roasted pork loin filled with fresh sage and smoked paprika in blackberry sauce with tropical fruits and pumpkin goat cheese puree.
