On Sundays, as tropical daylight fades from our majestic emerald rice paddies, we illuminate traditional torches and tea candles wrapped in banana palm fronds. Towering umbul-umbul flags flutter in the gentle breeze as twenty exclusive guestsenter this enchanted garden to dine under the stars.
Our chefs trek to East Bali to select the finest black pig, roasted here to perfection with coffee-wood from the Kintamani highlands, then immersed in homemade Balinese ‘bumbu rajang,’ a mouthwatering mix of galangal, turmeric, shallot, onions, and chilli, among other exotic herbs and spices. The scrumptious spread extends to luscious pork ribs, freshwater carp and succulent free-range chicken, as well as a bounty of organic greens and vegetable salads from our Chef’s Organic Garden, and of course, sweets from the East and West.
